Abstract

Menadione-mediated amperometry at carbon paste electrodes containing yeast Kluyveromyces lactis grown on different carbon sources (glucose, galactose or maltose) was exploited to monitor intracellular redox activity induced after yeast subjection to several monosaccharides (glucose, fructose, galactose) and disaccharides (sucrose, maltose, lactose). Higher electrode responses to galactose and lactose or maltose for yeasts grown on galactose or maltose, respectively, compared to those obtained with yeasts grown on glucose, indicated the influence of a carbon source on yeast capability to utilize carbohydrates.
